Spanish cream steak










ingrediants
-2 chicken breast piece(steak style)
chicken marination:
-salt 1/2 tsp
-black pepper 1/2 tsp
-mastard paste 1/2 tsp
-wastershine sauce 1 tbsp
-garlic paste 1/4 tsp
-oil 1 tbsp
-rose mary leaves 1/2 tsp
-soy sauce 1 tbsp
-steak hp sauce 1 tbsp
-handful grated cheese

For spanish cream sauce sauce:
-butter 1 tbsp
-chopped onions 2 tbsp
-chopped garlic  1/2 tsp
-white flour 1 tsp
-paprika powder 1tsp
-lemon juice 1 tbsp
-tomato paste 1 tbsp
-water 3/4 cup
-fresh cream 3 tbsp
-salt 1/4 tsp

For cream potatoes (sider)(optional):
mashed potatoes
fresh cream
white pepper
black pepper
chicken powder

Directions:
- marinate the chicken wiyh the given ingrediants for 1 day
-fry the steak in 2 tbsp of oil and cook well from both the sides until tender (may use griller or a fry pan)
-for cream potatoes mix all the ingrediants well and set aside in a foil .For more side options you can add french fries ,boiled vegetables and vegetable fried rice(for recipedia's special fried rice recipe
and search the post chicken shashlik with rice and grasp the recipe of fried rice)
-for preparing sauce,in a pan melt butter , add onions ,flour,garlic and paprika and mix well on a medium heat .add lemon juice ,waster shine sauce ,tomato paste,cream ,water and mix well.cook until it turns thick ,smooth and saucy .

Serving:
In a steak platter put the grlled chicken,pour the hot spanish cream sauuce over it .serve with siders and garnish with parsley

Brain masala








ingredients
-water
-2 brain(clean without veins)
-turmeric powder 1/4 tsp
-desi ghee or cooking oil 1/4 cup
-ginger garlic paste 1 tbsp
-onion paste 2 medim sized
-tomato paste 2 medium sized (can also use chopped tomatoes)
-salt to taste
-red chilli powder 1/2 tsp ot to taste
-turmeric powder 1 tsp
-corriander powder 1/2 tbsp
-black pepper powder 1 tsp
-fenugreek leaves (kasuri meethi)1 tsp
-ginger julienne
-green chillies chooped

direction
- boil brain in water and add 1/4 tsp tumeric powder for 5-10 mins 
strain the water and pet dry
-chop the brain into peices
-in a wok add oil ,ggpaste,onion paste and cook until onion tuirn brown then add ,tomato paste and cook well .Add chopped brain and all the spices  mix well 
-cover the lid and cook well
-add fenugreek leavers and mix well
-garnish with ginger and chillies

 kofta curry(chicken)
ingredients: -
-Mince ½ kg (without fat)
- Ginger garlic paste 1 tbs 
–Onion fried 2 tbs 
- Red chili powder 1 tsp or to taste 
- Coriander powder 1 tsp 
- raw green chilli paste 1/2 tsp(recipedia special click here and search the post)  
- Cumin powder 1 tsp 
-Chanay ka powder (Chickpea powder) roasted 2 tbs
 -Bread slices 2 
-cooking oil ½ Cup
-Onion grinded 1 medium 
-Ginger garlic paste 1 tbs 
-Tomato grinded 2 medium 
-Turmeric powder ½ tsp 
-Cumin powder ½ tsp 
-Garam masala powder ½ tsp
-Kashmir red chili powder 1 tsp (optional) 
-Coriander powder 1 tsp 
-Jaifil powder (Nutmeg powder) 1/4 tsp 
-Javatri powder (Mace powder) 1/4 tsp 
-Red chili powder ½ tsp or to taste 
-Kashkhash (Poppy seeds) powder ½ tbs 
-Onion fried 2 tbs crushed 
-Green chilli paste ½ tbs
 -Salt 1 tsp or to taste 
- Yogurt whisked 1 Cup
- Water 2 & ½ Cups or as required 
- Fresh coriander chopped 
-Green chillies
 Directions: -
In chopper,add mutton mince,ginger garlic paste,fried onion,red chili powder,coriander powder,recipedia raw chilli paste , cumin powder,chickpea powder,bread slices and chop until well combined. 
-Grease hands with  oil,take a mixture (44 gms) and make meat balls of equal sizes (makes 14).
 -In wok,add  oil,grinded onion and mix well. 
-Add ginger garlic paste,mix well and cook for 4-5 minutes. 
-Add grinded tomato,mix well and cook for 2-3 minutes. 
-Add turmeric powder,cumin powder,garam masala powder,Kashmiri red chili powder,coriander powder,nutmeg powder,mace powder,red chili powder,poppy seeds,fried onion,green chilli,salt and mix well.
 -Add yogurt,mix well and cook for 4-5 minutes. 
-Add water,mix well and bring it to boil,cover and cook on low flame for 4-5 minutes. 
-Now add meat balls and mix gently.
 -Cover and cook on low flame for 12-15 minutes.
 -Add fresh coriander and green chilli,cover and simmer for 2 minutes. -Garnish with fresh coriander & serve!

chicken tandoori karahi 
ingredients
-chicken 1/2 kg
-ginger garlic paste 1 tbsp
-lemon juice 1and 1/2 tbs
-salt to taste or 1 tsp
-yellow food colouring 1/4 tsp
-yougurt 1/2 cup
-red chilli powder 1 tsp or to taste
-corriander powder 1/2 tbsp
-turmeric powder 1/2 tsp
-garam masala powder 1 tsp
-red chilli crushed 1 tsp
-black pepper powder 1tsp
-cooking oil 2tbsp 
-roasted and crushed cumin seeds 1 tsp
-Desi ghee 4 tbsp
-4 large tomatoes (blanched and pureed)
-charcoal for smoke
-ginger julienne
-green chilli 2-3
-fresh corriander chopped
-dried fenugreek leaves(kasuri methi)
-ginger julienne


Directions

 In a bowl add chicken ginger garlic paste,lemon juice,salt,yellowfood colour and mix well and marinate for 30 min.In a bowl add yougurt ,red chilli powder,corriander powder,turmeric powder,garam masala powder,red chilli crushed,black pepper,cumin seeds and mix well and set aside
In a wok add ghee and oil , marinated chicken,mix well and fry for 10-12 min.add blanched and pureed tomatoes and mix well.Now add spiced yougurtand mix well cover and cook on low flame for 6-8 min then cook on high flame until the oil separates.Give a charcoal smoke for 2 min. Garnish it with ginger, green chilies fresh coriander and fenugreek leaves and serve

chicken shashlik with gravy



















Ingredients for gravy
-1 cup tomato ketchup
-2 tbsp butter
-2 garlic cloves finely chopped
-2 tsp red chilli paste
-2 tbsp Worcestershire sauce
-salt to taste
-2  tsp garlic powder
-1 tbsp red chilli powder
-2 tsp onion powder
-1 tsp mustard powder
-black pepper powder to taste
-1/4 cup brown sugar
-1/2  tbsp  vinegar
- tbsp  shangrila garlic chilli sauce
-3 tsp of red chilli sauce
-water and cornflour mixture (2 tbsp cornflour and 2 tbsp water)

Direction

Heat the butter in non stick pan .Add garlic and saute .gradually mix all the ingrediants except water and cornflour and simmer for 10-20 min then add cornflour and water mixture until gravy turns thicker. remove fom the heat


chicken marination ingredients


boneless chicken half kg
onion 2 (shashlik style)
capsicum(shashlik style)
soya sauce 1 tbsp
chilli sauce 2 tsp
vinegar 1tbsp
ginger garlic paste 1 tsp
brown sugar 1/2 tbsp
salt to taste
black pepper powder 2 tsp
paprika powder 2tsp
2 tbsp oil

Directions

Marinate the chicken with all the ingredients above except oil  for half an hour
Then fry it in a fry pan in oil .After mix 3 tbsp of gravy  in the chicken and pour rest of the gravy in                                      other bowl to serve . The chicken is par table to serve

Ingredients for chinese rice

rice 2 cup (soaked and boiled)
oil tbsp
egg beaten 2
carrot finel chopped 3/4 cup
capsicum finely chopped 3/4 cup
white pepper powder 1/2 tsp
chicken powder 1 tsp
sugar 1 tsp
salt 1 tsp or taste
green onion leaves chopped 3/4 cup
seesame oil (til ka tail)1 tsp


Directions


on a tray spread boiled rice and let them cool and set aside . In a wok add oil eggs and mix well .Add carrots,capsicum and mix well for 1-2 min.Add boiled rice mix and toss well.Add  white pepper powder ,chicken powder,sugar,salt,green onions and give it a good mix.Add seesame oil ,mix well and serve

shashlik is ready with spicy gravy , chicken and yummy rice. serve hot!

Chicken lasagne

                                                       




Ingredients:


Chicken Filling:

Oil 2 tbsp. 

Pyaz (Onion) Chopped 2 

Lehsan (Garlic) chopped 1 tbsp. 

Chicken qeema (Mince) ½ kg 

Tamatar (Tomato) Chopped 2 

Tomato ketchup ½ cup 

Namak (Salt) 1 tsp 

Lal mirch (Red chili) Crushed 1 tsp 

Kali mirch (Black pepper) Crushed 1 tsp 
Dried oregano 1 tsp 
Tomato paste 2 tbs 
Chicken stock or pani (water) ½ cup 
Shimla mirch (Capsicum) Chopped 1 cup
White sauce:
Makhan (Butter) 2 tbs 
Maida (All-purpose flour) 2 tbs 
Doodh (Milk) 2 & ½ cup 
Namak (Salt) ½ tsp or to taste 
Safed mirch powder (White pepper powder) 1 tsp
Assembling:
White sauce 
Lasagna sheets 12 boiled as per pack’s instructions 
Chicken filling 
White sauce 
Cheddar cheese 1 Cup or as required 
Mozzarella cheese 1 Cup or as required 
Dried oregano to sprinkle

Directions:
For Chicken Filling:
In pan, add oil and onion (chopped) and garlic (chopped), sauté for 1-2 minutes.
Add chicken mince and sauté until mince changes color.
Add tomatoes (chopped), tomato ketchup and mix well.
Add salt,red chili crushed,black pepper crushed,dried oregano,tomato paste and chicken stock or water,cook for 2-3 minutes.
Add capsicum,mix and set aside.
For White sauce:
In pan, add butter and let it melt, add all-purpose flour and mix well.
Gradually add milk and keep stirring and mix continuously.
Add salt and white pepper powder and cook until sauce thickens.
For Assembling:
Grease baking dish with oil or butter, spread white sauce, cover it with lasagna sheets, add chicken filling then again pour white sauce, sprinkle cheddar cheese and mozzarella cheese.
Repeat the same process.
Sprinkle cheddar cheese, mozzarella cheese and dried oregano.
Bake for 20-25 minutes at 180 C or until cheese is golden brown.
Chicken lasagna is ready.
